they’re only in season in spring! you CAN get dried wild ramps. but like. they taste exactly the same as dried scallions. the texture is the same too. like they’re good but they’re not worth the extra money. I just go pick them in the forest if I get a chance in the spring.

Do lemon balm and bee balm count? I think my mom grows the latter, it smells nice.
Saffron, parsley, or allspice? I think you have everything else in my spice cupboard, its mostly pretty common ones.
Okay, since someone mentioned extracts, this might be unfair cause my parents have some weird extracts for making different flavors of fudge. I’m not sure I’d call them spices, but uh, maple extract, lemon extract, almond extract, strawberry extract (and you’ve already said you have vanilla).
I guess i could do some herbs that are like in teas? Chamomile, echinacea, hawthorn, and lavender?
